Homemade Sauerkraut for Gut Health

Equipment

  • 32 oz mason jar
  • Fermentation weight or rock

Ingredients
  

  • 1 head cabbage
  • 2-3 tbsp salt more or less. You need about 2 teaspoons per pound.

Instructions
 

  • Chop cabbage
  • Massage cabbage with salt
  • Let soak in its own juices for 20 minutes
  • Put in mason jar
  • Push everything down
  • Add cabbage leaves on top
  • Add weight
  • Screw on lid finger tight
  • Let ferment for 14 days
