Protein Oatmeal (With milk and egg yolks!)

Ingredients
  

  • 1 cup oatmeal
  • 2 cups whole milk
  • 2 egg yolks
  • pinch of salt
  • 1/2 tsp cinnamon or pumpkin spice
  • 1 tbsp pure maple syrup
  • 1 tbsp butter optional

Instructions
 

  • Bring milk and salt to a boil
  • Stir in oatmeal and reduce to a simmer
  • Simmer with lid on for a few minutes
  • Stir frequently and let the oatmeal soak up most of the milk
  • Once oatmeal is cooked and most liquid is absorbed, stir in pumpkin spice, maple syrup, and butter
  • Take oatmeal off heat and add in the egg yolks, stirring constantly until well incorporated (If you don't stir constantly the egg yolks will cook into a scrambled egg like texture which you want to avoid.)
  • Serve immediately and enjoy
