Gluten Free Salmon Patties

- 14 oz canned boneless skinless Alaskan salmon two small cans, or one large
- 2 eggs
- 1/2 cup gluten free oats
- 1 1/2 tsp sea salt or to taste
- 1 1/2 tsp old bay seasoning
- 1 tsp oregano
- 1 1/2 tsp cayenne pepper hot sauce
- 1/2 juice of 1/2 lemon
- 1/2 tsp garlic powder
- 1/2 minced white onion
- 1/4 cup fresh chopped parsley
- 4-6 tbsp olive oil (for cooking)
Gluten Free Salmon Patties Sauce
- 1/2 cup sour cream
- 1/2 Juice of 1/2 lemon
- 1/2 tsp old bay seasoning
Drain canned salmon
Add all ingredients to a bowl except for olive oil
Mix well to ensure everything is well combined
Heat a large skillet with ½ tbsp olive oil
Form a small patty with about a spoonful of mixture and cook it on the skillet
Taste patty to see if any flavor/seasoning needs to be adjusted
Once mixture is to your liking, form the mixture into smaller hamburger patties
Add half the remaining oil, or more if needed, then add patties
While patties are cooking, mix ingredients for sauce
Serve patties with a dollop of sauce on top
