Gluten free salmon patties are one of my top quick and easy meals to whip up in a pinch. Everyone loves them! This is such a great source of protein, and there is so much flavor in these. You can use this recipe as a blueprint, use what you have available and make it your own — just make sure to add the eggs and the oats.
Salmon patties are very forgiving. You can also add leftover root vegetables to them. If I have leftover boiled or mashed sweet potato, I add it into the mixture, and it adds another layer of flavor.
Tips for making Gluten Free Salmon Patties:
- Cook a small piece of the mix before you cook them all to see if you need to adjust the flavor and add more salt.
- Make sure you buy skinless and boneless salmon! If not, try to pick out the bones as much as you can.
- While it’s cooking, mix up your sauce.
- You have to use enough oil or else the patties won’t crisp up they will just burn and stick.
- If it tastes a bit salty, don’t worry! The sauce you make for the topping will even out the saltiness.
- There is also an old bay hot sauce which is great in this recipe.
- Makes for great leftovers.
- If the batter feels pretty moist or like it’s not holding together, the final patty will hold shape after being cooked.
Ingredients for Gluten Free Salmon Patties:
This makes 10 small burger sized patties. Serves 2 people.
- 14 oz of canned boneless skinless Alaskan Salmon (two small cans, or one big can)
- 2 eggs
- ½ cup gluten free oats
- 1 ½ tsp salt (or to taste)
- 1 ½ tsp old bay seasoning
- 1 tsp oregano
- 1 ½ tsp cayenne pepper hot sauce
- Juice of half a lemon
- ½ tsp garlic powder
- ½ minced white onion
- ¼ cup fresh chopped parsley
- 4-6 tbsp olive oil (for cooking, add more as needed)
Ingredients for Gluten Free Salmon Patties Sauce
- ½ cup sour cream
- Juice of ½ lemon
- ½ tsp old bay seasoning
Directions for Gluten Free Salmon Patties
- Drain canned salmon
- Add all ingredients to a bowl except for olive oil
- Mix well to ensure everything is well combined
- Heat a large skillet with ½ tbsp olive oil
- Form a small patty with about a spoonful of mixture and cook it on the skillet
- Taste patty to see if any flavor/seasoning needs to be adjusted
- Once mixture is to your liking, form the mixture into smaller hamburger patties
- Add half the remaining oil, or more if needed, then add patties
- Be careful not to overcrowd the pan, you want to make sure they get crispy. Usually, it takes about 2-3 batches depending on the size of your skillet.
- While patties are cooking, mix ingredients for sauce
- Serve patties with a dollop of sauce on top

I like to serve it with sweet potatoes in any form, avocado, or rice. You can serve it with whatever you want, Zucchini, fresh cucumber, sauerkraut, whatever you can think of!

You could try to use Greek yogurt. I have not done it yet, but I imagine it would be fine.

Some recipes may use flour, or flour-based products like crackers. This recipe uses oats, therefore does not contain flour or gluten.
How do I store leftover salmon patties?
Store your leftovers in an airtight glass container and they will last 1-2 days in the fridge.
Do they freeze well?
I have not tried to freeze them. If you try it, let me know how it goes.
Why are my salmon patties crumbling?
If your salmon patty is crumbling it may be too wet. You can try to add some more oats. It could also be too dry. If that’s the case, you can add a little water to the mixture.
