Gluten-free, flour-less banana pancakes that are surely to be a hit.
Ingredients
- 1 banana
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon pumpkin spice is also a great option
- pinch of salt
- 2 tbsp butter for cooking
Instructions
- Mash the banana in a bowl with fork
- Add the rest of the ingredients (except butter), and stir well to combine
- In a hot pan over medium high heat, add butter
- Pour batter evenly into 4 pancakes
- Let cook for about 4 minutes or until the edges are golden, then flip
- Finish cooking for 2 more minutes
- Serve immediately
