Marinated cucumber salad is a great way to use up all of those summer cucumbers from the garden. It’s that time of year when they are growing faster than we can eat them. It gets to a point where you don’t really know what to do with them anymore. This is a quick, easy, and delicious recipe for those times.
This cucumber salad is great as a side dish to my Cast Iron Skillet Chicken Breast recipe. It’s also delicious on a salad, or as a snack on a hot summer day. It’s cool, refreshing, and bursting with flavor! You only need a few ingredients and a couple of minutes to throw this together.
For this simple recipe, all you need is:
- Filtered water
- Apple cider vinegar
- Honey
- Salt and pepper
- 2 cucumbers
- Onions (optional)
- Cayenne pepper (optional)
- Mason jar or glass container
How To Make Marinated Cucumber Salad
- First, wash and peel cucumbers.
- Slice about a quarter-inch thick. Slice up onion thin if adding.
- Add them to a mason jar (or container of choice).
- Mix all other ingredients in a separate bowl.
- When combined, pour over cucumbers.
- Close the lid, lightly shake and put cucumbers in the fridge to chill for at least 1 hour.
- Serve and enjoy!

How long does marinated cucumber salad keep in the fridge?
These don’t normally last in my house, but I would say they will be good for about 3-4 days.
Can I use baby cucumbers?
Yes, you could use baby cucumbers. You don’t have to peel the skin of baby cucumbers, either.
Can I add other vegetables?
Yes. I have added bell peppers, fresh jalapenos, cherry tomatoes, and more. Feel free to get creative.
I don’t have honey, can I use table sugar?
Yes, you can use table sugar, although I highly suggest getting some local raw honey.

Ingredients
- 1/3 cup warm filtered water
- 1/3 cup apple cider vinegar
- 2 medium to large cucumbers
- quarter of a white onion Optional
- 1/2 tsp salt or to taste
- 1.5 tbsp honey
- 1/4 tsp fresh cracked black pepper or to taste
- half a pinch cayenne pepper optional
Instructions
